Ingredients:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 pounds ripe tomatoes, chopped (or two 14-ounce cans of whole peeled tomatoes)
  • 2 cups vegetable broth
  • 1/2 cup fresh basil leaves, packed
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup heavy cream or coconut milk (optional, for creamier texture)

Preparation Tips:

Cooking instructions

Return the blended soup to low heat. Stir in the sugar if using, and season with salt and freshly ground black pepper to taste. If a creamier texture is preferred, add the heavy cream or coconut milk at this stage and stir until fully incorporated. Warm the soup gently for another 5 minutes, making sure it does not boil after adding the cream.
